Red and White Bean Soup
For many of us, February is typically a cooler month. There’s nothing like a warm bowl of soup during this type of weather, especially if it is chock full of hearty beans and vegetables. In this recipe, the red beans and tomatoes team up to promote our health and provide color that reminds us of the holiday celebrated at this time of year.
In a large glass-lidded bowl, combine 8 ounces of dry red beans with 8 ounces of dry white beans, for a total of 16 ounces/1 pound. Sprinkle beans with baking soda, fill with water to top of bowl, cover with lid, and allow to soak overnight.
The next day, combine the following ingredients in a stockpot:
Previously soaked beans, drained and rinsed
6 cups boiling water (I use an electric kettle)
4 tsp vegetable bouillon (2 ounces)
1 large onion, chopped
4 large carrots, peeled and sliced into coins
4 large celery stalks, chopped (include the leaves)
1 14.5 ounce can diced tomatoes (I use no-salt added)
Sprinkle of sugar
½ tsp paprika
½ tsp garlic powder
Cover stockpot and bring to a gentle boil. Cook until beans and vegetables are tender, approximately 3½ hours. Add desired amount of salt and pepper to each serving. Serves 6.
